Documentation: Apostrophes in source code escaped

The source code on some documentation pages (like ​https://developer.wordpress.org/rest-api/extending-the-rest-api/adding-custom-endpoints/) has its apostrophes (') escaped (to '), becoming syntactically incorrect.
