Adding Analytics to Mercantile Store

Description
At the moment there is no data coming into Google Analytics for the Mercantile shop (https://mercantile.wordpress.org/), and the store just relaunched with a new design. With the new design, and new products coming into the store, it would be good to understand performance with this.
I understand that GA4 is coming soon (ticket:6483), but it would be good to start collecting data soon inside the existing Google Analytics property for WordPress.org.

To do this, we just need to add the same Google Tag Manager snippet that's already used throughout the rest of the ecosystem.
At a push, we could just use a native GA code, but that would:
- Bypass a bunch of the privacy protections and configuration controls we have in GTM, and;
- Require changing from UA to GA4 in a couple of months (or, require a dual roll-out, then an update in July)
Note that this has been asked before (see https://meta.trac.wordpress.org/ticket/4538), but it seems that internal politics are preventing us from fixing our leaky bucket ;)

Mercantile isn't under the control of the Meta team, but, I have opened an issue in the Automattic repo for it. @bjmcsherry I wasn't able to find your GitHub username, but you should be able to follow that up with whomever works on Mercantile (Probably whomever implemented the new design).
There will be some social media content and a banner for WordPress.org that will be sending traffic to the Mercantile store, which is why it would be good to track performance soon.
