Thanks for the suggestion! However, this is very much an intentional design decision for the current theme, which I agree with.

The purpose of the list is to expose, at a glance, all of the different categories of products that are available. Each category exists as a separate page, so clicking a link from the list takes you to that specific page. Using a dropdown is more appropriate if it were a filter, which could certainly be done, but the point is to feature each category as a different section of the site.
